~~~Christmas Cookies~~~
When I make Christmas cookies it takes the whole day.  I am not a meticulous baker you see. I get easily distracted or realize I've forgotten an important ingredient and have to run out to get this or that. It also doesn't help that I only own two baking sheets and no cooling racks (why I haven't gotten these is beyond me but I always forget) which lengthens the entire process. But despite all of this I do love baking them. Over the years I've found a handful of recipes I truly enjoy.  I'll go ahead and share three of them  with you (save my mother's Christmas Tree spritz- it's going to stay in the family!)
Melting Moments from Joy of Baking is one of my favorites. They truly melt in your mouth!
Martha Stewart's Oatmeal Lace are buttery and crisp.
Every year I like to try out a new Madeleine, this year I tried out a Strawberry Madeleine recipe. I think I prefer the traditional vanilla Madeleine but it's always nice to give something new a try.
Merry Christmas! And Happy Munching!
